ELEVAGE: Grapes were crushed, destemmed and fermented on their skins for ten days. Pressed juice was moved to stainless steel where fermentation, including full malolactic, continued into July of 2019. In early August of 2019 the wine was racked of its lees, given a one brix addition of sugar, and gravity bottled by hand without fining or filtration. The wine naturally refermented in bottle over the next four months.

TASTING NOTE: Ripe lime and orange zest aromas. Orange peel, anise and shale in the mouth with a light tannic grip. Bright acid and quite dry on the finish.

SENECA LAKE VINEYARD: In and around Lodi, New York on the eastern shore of Seneca Lake, grower Mark Wagner maintains nearly seventy acres of vines contained in six separate plots with soils mostly composed of deeper loam over shale and limestone. Green mulching and cover crops are used to manage weeds and vines are meticulously cared for with an eye towards sustainability. These vineyards produce classic Finger Lakes wines with wonderful balance and clarity.

A bunch of grapes. Seneca Lake Vineyard, clone 4 chardonnay. It's practically obscene.
