Settled juice was allowed to oxidize before being pumped into a 1000 liter stainless steel tank, an ambient yeast fermentation began and continued for one year without quite going dry, malolactic occurred in the late fall of 2014. In October of 2015 the still slightly sweet wine was racked off its lees and gravity bottled by hand without fining or filtration in clear, crown cap bottles.

TASTING NOTE: 2014 Eminence Road - Riesling - Seneca Lake Vineyard - Very mineral riesling with piercing acidity balanced by ample fruit. Lime and nectarine aromas, with a barely perceptible residual sweetness acting as a balancing weight against the racy acid. Pair this wine with bratwurst, pork chops and spicy stir-fry.

SENECA LAKE VINEYARD: In and around Lodi, New York on the eastern shore of Seneca Lake, grower Mark Wagner maintains nearly seventy acres of vines contained in six separate plots with soils mostly composed of deeper loam over shale and limestone. Green mulching and cover crops are used to manage weeds and vines are meticulously cared for with an eye towards sustainability. These vineyards produce classic Finger Lakes wines with wonderful balance and clarity.
