2019 Chardonnay - Elizabeth's Vineyard
Dry Sparkling Wine

Grape: 100% Chardonnay
Alcohol: 12.5%
Total sulfite addition: 60 ppm
Crushed and destemmed - 1 day maseration
Stainless steel - 10 months, old French oak - 12 months
Unfined and unfiltered
TASTING NOTE: Very fine mousse, aromas of yeast apple and oak with caramelized lemon
and pear fruit in the mouth. Ripe wine, dry with round acids and a long finish.
ELEVAGE: Hand picked grapes were crushed, destemmed and put into one ton bins to
macerate for one day. Pressed, browned and settled juice was moved to stainless steel
to ferment. In August of 2020 the wine was moved to old French oak barrels where
fermentation slowly continued for six more months. In August of 2021 the wine was
racked, given a one brix sugar addition and bottled by hand without fining or filtration.
A second fermentation took place in bottle over the following three months.
VINEYARD: Located in Hector, New York on the eastern shore of Seneca Lake, this west
facing vineyard is composed of shallow silt loam soil over shale on a slope leading to
some of the lake's deepest waters. Farmed by second generation grower John
Leidenfrost and his daughter, Elizabeth, the vineyard's privileged exposure and thin,
shale laden soil produce wines of great depth and backbone.
