2018 CHARDONNAY

Grape: 100% Chardonnay (30+ year-old Clone 4)

ELEVAGE:Grapes were crushed, destemmed and put into one ton bins to macerate for two days. Pressed, settled juice was moved to stainless steel where fermentation, including full malolactic, took place. In August of 2020, after 22 months on its lees, the wine was racked and bottled by hand without fining or filtration.

TASTING NOTE: 2Flint, ripe pear and wet concrete in the nose. Pear fruit, glycerin, juicy acids and a wash of shale in the mouth.

LAMB'S QUARTERS VINEYARD: In and around Lodi, New York on the eastern shore of Seneca Lake, grower Mark Wagner maintains nearly seventy acres of vines contained in six separate plots with soils mostly composed of deeper loam over shale and limestone. Green mulching and cover crops are used to manage weeds and vines are meticulously cared for with an eye towards sustainability. These vineyards produce classic Finger Lakes wines with wonderful balance and clarity.
