ELEVAGE: Hand picked grapes were crushed, destemmed and allowed to macerate for two days before being pressed. Settled, oxidized juice was pumped into a 1000 liter stainless steel tank, an ambient yeast fermentation began quickly and continued struggling along for some 18 months, malolactic began in the spring of 2015 but ended about half way through. In September of 2016 the wine was racked off its lees and gravity bottled by hand without fining or filtration.

TASTING NOTE: 2014 Eminence Road - Chardonnay - Seneca Lake Vineyard - Ripe pear and marzipan aromas, very mineral in the mouth with bright acids and a crisp, lingering limestone finish. Pair it with an aged New York cheddar and some crusty bread or a cream based seafood dish. With saffron. It's worth mentioning that the grapes for this wine come from twenty-five plus year-old, clone 4 chardonnay vines. Clone 4 chardonnay is notable for it's abundant crop, high acidity and crisp, pure chardonnay fruit flavor.

SENECA LAKE VINEYARD: In and around Lodi, New York on the eastern shore of Seneca Lake, grower Mark Wagner maintains nearly seventy acres of vines contained in six separate plots with soils mostly composed of deeper loam over shale and limestone. Green mulching and cover crops are used to manage weeds and vines are meticulously cared for with an eye towards sustainability. These vineyards produce classic Finger Lakes wines with wonderful balance and clarity.
