TASTING NOTE: Nose of watermelon rind, raspberries and shale. Raspberry fruit, orange
peel and white pepper in the mouth, dry and lightly astringent with a bright, juicy finish.
Serve cool, about 65 F.
ELEVAGE:Grapes were crushed, destemmed and put into a one ton bin to macerate for
three days. Pressed, browned and settled juice was moved to stainless steel where
fermentation, including full malolactic, took place. In October of 2020, after eleven
months in tank the wine was racked and bottled by hand without fining or filtration.
VINEYARD: In Keuka Park, New York on the western shore of Keuka Lake, fifth generation
grapegrower Adam Folts maintains fifty acres of native, hybrid and vinifera vines.
Grapes from this vineyard produce wine with bright fruit and bright, chalky acids.
