ELEVAGE: Hand picked grapes were crushed, destemmed and allowed to macerate for three days before being pressed. Settled, oxidized juice was pumped into old French oak barrels where an ambient yeast fermentation began and continued until September of 2016 when the still lightly fermenting wine was racked off its lees and gravity bottled under crown cap by hand without fining or filtration. Fermentation continued in the bottle to produce a naturally sparkling, dry rose wine.

TASTING NOTE: 2015 Eminence Road - Cabernet Franc Rose - Seneca Lake Vineyard - Lots of color with a nose of fresh crushed raspberry, raspberry leaves and a bit of burnished wood. In the mouth it is surprisingly dry with ample body, juicy red fruit and gentle, cleansing tannin. The light effervescence makes the whole thing bounce with freshness. Pink dress and bubbly personality aside, this is a serious bottle that deserves some consideration at the dinner table, pair it with barbecue, charcuterie, burgers or any substantial summer food. Please also note: this lightly sparkling wine has not been disgorged and contains a fair amount of sediment, which is harmless, mostly sinks to the bottom and is easily avoided with careful pouring. SENECA LAKE VINEYARD: In and around Lodi, New York on the eastern shore of Seneca Lake, grower Mark Wagner maintains nearly seventy acres of vines contained in six separate plots with soils mostly composed of deeper loam over shale and limestone. Green mulching and cover crops are used to manage weeds and vines are meticulously cared for with an eye towards sustainability. These vineyards produce classic Finger Lakes wines with wonderful balance and clarity.
