2019 CABERNET FRANC - Lamb's Quarters Vineyard

Total sulfite: 35 ppm (25 at crush, 10 at bottling)

TASTING NOTE: Raspberry leaf, graphite and orange rind aromas. Concentrated raspberry
and cherry fruit flavors, the palate is dry, balanced and textured with fine grained
tannin. Decant two to 48 hours and serve cool, about 65 F.
ELEVAGE: Grapes were foot crushed and put whole cluster into one ton bins to ferment
with once daily punchdowns. After twenty-two days the grapes were pressed and settled
juice was moved to old French oak barrels to complete fermentation. In September
of 2020 the wine was racked out of barrel into tank and bottled by hand without fining
or filtration.
VINEYARD: In Lodi, New York on the eastern shore of Seneca Lake grower Mark Wagner
maintains one hundred and twelve acres of vines over twenty unique plots with soils
primarily composed of Honeoye Silt Loam and Lansing Gravely Loam over shale.
These vineyards are meticulously cared for with an eye towards sustainability and produce
classic Finger Lakes wines with wonderful balance and clarity.
Two tons of beautiful cabernet franc all ready for crushing.
