2020 Acidalia - Elizabeth's Vineyard

Grape: 50% Cabernet Sauvignon, 50% Merlot

TASTING NOTE: Floral, fruity, weedy, a hint of cocoa powder, tiny red and blue berries,
light in the mouth with ample acid and tannin. Finish is clean, dry and bright
with a wash of tannin.
ELEVAGE: Hand picked grapes were foot crushed and put whole cluster into one ton
bins to ferment with once daily punchdowns. After seventeen days the grapes were
pressed and settled juice was moved to neutral French oak barrels to complete
fermentation which continued into June of 2021. In August of 2021 the wine was
racked out of barrel and bottled by hand without fining or filtration.
VINEYARD: Located in Hector, New York on the eastern shore of Seneca Lake, this west
facing vineyard is composed of shallow silt loam soil over shale on a slope leading to
some of the lake's deepest waters. Farmed by second generation grower John
Leidenfrost and his daughter, Elizabeth, the vineyard's privileged exposure and thin,
shale laden soil produce wines of great depth and backbone.
