2023 RIESLING
Botrytis

Grape: 100% Riesling - 25% botrytis affected
Alcohol: 10.7%
Total added sulfite: 40 ppm
Ingredients: Grapes, yeast, sulfite
Crushed and destemmed
24 hour maceration
Stainless steel for 11 months
Unfined and Unfiltered
Farming: Conventional/sustainable
Vineyard: Sheldrake Point Vineyard - Cayuga Lake, east facing, gentle slope
Soil: Gravelly loam and clay derived from shale, limestone and slate

NOTE: Peach blossom, hay, apricot, dense, dry and long with ripe lime and shale in the finish.

ELEVAGE: Grapes were crushed, destemmed and allowed to macerate for 24 hours before pressing. Settled juice was moved to stainless steel where fermentation, including full malolactic, continued until June of 2024. In September the wine was racked off its lees and bottled without fining or filtration.

MISCELLANEOUS: Some very nice, clean, botrytis affected grapes in the pick give this wine a concentrated mouth feel and deep apricot flavor. Drink over several days.
