2023 PINOT NOIR
Lamb's Quarters Vineyard

Grape: 100% pinot noir
Alcohol: 10.9%
Total sulfite addition: 45 ppm
Ingredients: Grapes, yeast, sulfite
Foot crushed with 100% stem inclusion
10 days on skins
French oak barrels (4-8 years-old) for 12 months
Unfined and unfiltered
Farming: New York State Certified Sustainable
Vineyard: Lamoreaux Landing - Seneca Lake - Lodi - west facing, gentle slope
Soil: Honeoye Silt Loam and Lansing Gravelly Loam over shale


Note: Cherry fruit, sandalwood, creamy light body, dry with juicy acid and dense tannin.

Elevage: Grapes were foot crushed whole cluster into a one ton bins with one-hundred per cent stem inclusion and let to ferment with once daily punchdowns. After ten days the grapes were pressed and settled juice was moved to old French oak barrels to complete fermentation, including full malolactic, which finished in June of 2024. In September of 2024 the wine was racked off its lees and bottled without fining or filtration.

Miscellaneous: A pretty pinot noir with a gentle feel. Give it some air and drink with food, outside in the open air. Roast chicken of course or mushrooms, vegetable gratin, a picnic lunch, smoked trout. It's light but sturdy.
