Grape: 100% Cabernet Franc
Alcohol: 11.3%
Total added sulfite: 45 ppm
Ingredients: Grapes, yeast, sulfite
Crushed with 50% stem inclusion
21 days on skins
French oak barrels (4-16 years-old) for 12 months
Unfined and unfiltered
Farming: New York State Certified Sustainable
Vineyard: Lamoreaux Landing - Seneca Lake - Lodi - west facing, gentle slope
Soil: Honeoye Silt Loam and Lansing Gravelly Loam over shale


Note: Raspberry leaf, plum, wet stone, seamless with fine grained tannin and juicy acid.

Elevage: Grapes were crushed into a bin with fifty per cent stem inclusion and left to ferment with once daily punchdowns. After twenty-one days the grapes were pressed and settled juice was moved to old French oak barrels to complete fermentation, including full malolactic, which finished in August of 2024. In October the wine was racked off its lees and bottled without fining or filtration.

Miscellaneous: Recently we have cut stem inclusion down to fifty per cent and begun putting everything through the crusher destemmer to fully break the skins of the grapes. Consequently the texture and tannic profile of the reds, particularly the cabernet franc, has become much more fine grained and elegant. This change was inspired after drinking ten and 15-year-old bottles from the cellar and finding the stem tannin still quite course. Who knows, maybe in another ten or 15 years we will actually figure out winemaking.
