Soil: Silt loam over shale
Note: Orange peel, lime and flint with a frothy mousse, persistent bubble, bright acids and a
crisp, dry finish.
ELEVAGE: Elevage: Grapes were crushed, destemmed and pressed. Settled juice was moved to
stainless steel where fermentation, including full malolactic, continued over about ten
months. In August of 2024 the wine was racked, sugar and yeast were added and it was
bottled without fining or filtration under crown cap. A second fermentation occurred in the
bottle producing a dry, sparkling wine. Bottles were not disgorged.
Miscellaneous: Aromella is a cross between traminette and ravat 34 developed by Cornell
around 1976 and released for commercial planting in 2014. It is a cold hardy vine that
produces aromatic white grapes with thin skins. It makes quite an appealing wine with a
wild nose, low alcohol and vibrant acid.
