2022 CABERNET FRANC
Lamb's Quarters Vineyard

Dry Red Table Wine
51 cases produced
Grape: 100% Cabernet Franc
Alcohol: 11.6%
Total sulfite addition: 45 ppm
Ingredients: Grapes, yeast, sulfite
Crushed with 50% stem inclusion
21 days on skins
French oak barrels (4-16 years-old) for 11 months
Unfined and unfiltered
Farming: Conventional/sustainable
Vineyard: Seneca Lake, west facing, gentle slope
Soil: Honeoye Silt Loam and Lansing Gravelly Loam over shale

Note: Cedar and cherry, dry with raspberry flavors, firm tannin and a wash of shale.

Elevage: Grapes were crushed into a bin with fifty per cent stem inclusion and let to ferment with once daily punchdowns. After twenty-one days the grapes were pressed and settled juice was moved to old French and American oak barrels to complete fermentation, including full malolactic, which finished in August of 2023. In October the wine was racked off its lees and bottled without fining or filtration.

Miscellaneous: Only two barrels of Lamb's Quarters cabernet franc in '22 due to winter injury in the vines. A very nice vintage of this wine, and first to ever see American oak--albeit very old American oak--it is drinking well right now. Pair with lighter dishes.
