ELEVAGE: Grapes were crushed, destemmed and pressed. Settled juice was moved to
stainless steel where fermentation, including full malolactic, continued over about eight
months. In September of 2023 the wine was racked off its lees and bottled without fining or
filtration.
MISCELLANEOUS: Aromella is a cross between traminette and ravat 34 developed by Cornell in
1976 and released for commercial planting in 2014. It is a cold hardy vine that produces
aromatic white grapes with thin skins. It makes quite an appealing wine with a wild nose,
low alcohol and vibrant acid.
