2022 ACIDALIA
Red Blend

Dry Red Table Wine

Grapes: 78% merlot, 22% cabernet franc
Alcohol: 11.3%
Total added sulfite: 55 ppm
Ingredients: Grapes, yeast, sulfite Crushed with partial stem inclusion
French oak barrels (6-12 years old) for 11 months
Unfined and unfiltered
Farming: Conventional/sustainable
Vineyard: Seneca Lake, west facing
Soil: Various loam and shale


TASTING NOTE: Red plum, tobacco, leather, juicy red fruit, shale with firm tannin.

ELEVAGE: Grapes were crushed into a bin--cabernet franc with one-hundred per cent stem inclusion, merlot with none--and let to ferment with once daily punchdowns. After twenty-one days the grapes were pressed and settled juice was moved to old French oak barrels to complete fermentation, including full malolactic, which finished in August of 2022. In late September the wine was racked off its lees and bottled without fining or filtration.

MISCELLANEOUS: Acidalia is the name of the area where our farm is located. The town is long gone as is the acid factory that supported it over a century ago. This vintage of Acidalia is dominated by merlot with cabernet franc adding complexity and a touch of brett.
