Farming: Conventional/sustainable
Vineyard: Lamb's Quarters - Seneca Lake, west facing, gentle slope
Soil: Honeoye Silt Loam and Lansing Gravelly Loam over shale


NOTE: Lime and apple, light mousse, dry with a gentle astringency.

ELEVAGE: Grapes were crushed and destemmed and pressed. Settled juice was moved to stainless steel where fermentation, including full malolactic, continued until August of 2022. In October of 2022 the wine was racked, sugar and yeast were added and it was bottled by hand without fining or filtration under crown cap. A second fermentation occurred in the bottle producing a dry, sparkling wine. Bottles were not disgorged.

MISCELLANEOUS: A completely dry sparkler with a very light mousse of tiny bubbles, mostly showing in the back of the mouth. Great as an aperitif and along side dishes with some heat.
