2021 PINOT NOIR ROSE
Naturally Sparkling
Dry Rose Sparkling Wine

Grape: 100% Pinot Noir
Alcohol: 9.9%
Total sulfite addition: 50 ppm
Crushed and destemmed
1 day on skins
French oak barrels (4-6 years) for 11 months
Unfined and Unfiltered
Farming: Conventional/sustainable
Vineyard: Elizabeth's - Seneca Lake, west facing, steep slope
Soil: Shallow silt loam over fractured shale
Note: Rose petal, cherry and flint, gentle mousse, dry with barrel notes and light tannin.
Elevage: Grapes were crushed and destemmed into a one ton bin to macerate for
24 hours before pressing. Settled juice was moved to old French oak barrels where
fermentation, including full malolactic, continued until August of 2022. In
September of 2022 the wine was racked, sugar was added and it was bottled by
hand without fining or filtration under crown cap. A second fermentation
occurred in the bottle producing a dry, sparkling wine. Bottles were not disgorged.
Miscellaneous: This wine was barrel fermented to dryness before being bottled
with a light dose of sugar. Bottle fermentation was followed by an additional
2 years of aging.
