2021 PINOT NOIR
Lamb's Quarters Vineyard

Grape: 100% pinot noir
Alcohol: 10.5%
Total sulfite addition: 50 ppm
Foot crushed with 100% stem inclusion
12 days on skins
French oak barrels (4-6 years-old) for 11 months
Unfined and unfiltered
Farming: Conventional/sustainable
Vineyard: Seneca Lake, west facing, gentle slope
Soil: Honeoye Silt Loam and Lansing Gravelly Loam over shale


NOTE:Cherry, dried flower, oak spice, light in the mouth with sweet cherry fruit and firm tannin.

ELEVAGE: Grapes were foot crushed whole cluster into a one ton bins with one-hundred percent stem inclusion and let to ferment with once daily punchdowns. After twelve days the grapes were pressed and settled juice was moved to old French oak barrels to complete fermentation, including full malolactic, which finished in July of 2022. In August the wine was racked out of barrel and bottled by hand without fining or filtration.

MISCELLANEOUS: A delicate, barrel aged pinot noir showing some stem tannin. Pair this wine with grilled beef.
