2021 CHARDONNAY

Total sulfite addition: 60 ppm

French oak barrels (7 years-old) for 11 months

Farming: Conventional/sustainable
Vineyard: Keuka Lake, east facing, steep slope
Soil: Silt loam over shale
NOTE: Pear, flint, spice box, light in the mouth with soft, chalky acid.
ELEVAGE: Grapes were crushed and destemmed into a one ton bin to
macerate for 72 hours before pressing. Settled juice was moved to old
French oak barrels where fermentation, including full malolactic, continued
until August of 2022. In September the wine was racked and bottled without
fining or filtration.
MISCELLANEOUS: These grapes were grown by Alan D. Hunt over on the west
side of Keuka Lake. It's a long drive to get there but the fruit from these
vineyards has a charm that we find irresistible. Clocking in at a whopping
9.9% alcohol the wine still somehow manages to display all the classic flavors
you expect from barrel aged chardonnay. Nice to sip on its own or pair with
an aged cheddar.
