2021 Cabernet Franc - Elizabeth's Vineyard
Dry Red Table Wine

Grape: 100% Cabernet Franc
Alcohol: 10.5%
Total sulfite addition: 55 ppm
- Crushed with 25% stem inclusion
- American and French oak barrels (10-15 year-old) for 12 months
- Unfined and unfiltered
- Farming: Conventional/sustainable
- Vineyard: Seneca Lake, west facing, steep slope
- Soil: Shallow silt loam over fractured shale
TASTING NOTE: Raspberry, cherry and wood spice, light body with tiny red fruits, chalky
acid and soft tannin.
ELEVAGE: Grapes were crushed into a one ton bins with twenty-five percent
stem inclusion and let to ferment with once daily punchdowns. After twenty-five
days the grapes were pressed and settled juice was moved to old French
and American oak barrels to complete fermentation, including full malolactic,
which finished in August of 2022. In mid-October the wine was racked out of
barrel and bottled by hand without fining or filtration.
MISCELLANEOUS: In 2021 we decided to cut stem inclusion down to 25% for the
cabernet franc, hoping to let the fruit shine through in this atypically light
vintage of Elizabeth's cabernet franc.
