2021 ACIDALIA

Grapes: 38% merlot, 31% cabernet franc, 31% cabernet sauvignon
Alcohol: 10.5%
Total sulfite addition: 55 ppm
Crushed with 25% stem inclusion
French oak barrels (8-10 years old) for 11 months
Unfined and unfiltered
Farming: Conventional/sustainable
Vineyard: Seneca Lake, west facing
Soil: Various loam and shale
TASTING NOTE: Weedy red and blue fruit, bright, chalky acid, light and fresh in the
mouth, dry with fine tannin.
ELEVAGE: Grapes were crushed into a one ton bins with twenty-five percent
stem inclusion and let to ferment with once daily punchdowns. After nineteen
days the grapes were pressed and settled juice was moved to old French oak
barrels to complete fermentation, including full malolactic, which finished in
July of 2022. In late September the wine was racked out of barrel and bottled
by hand without fining or filtration.
MISCELLANEOUS: A blend of roughly equal parts cab franc, cab sauvignon and
merlot sourced from three vineyards on the east side of Seneca Lake. Who
knew these grapes went together so well? 2021 was a tough harvest for the
cabernets (and everything else, honestly) with a big crop and lots of rain,
somehow this wine is making it work. Drinks well over several days.
