Naturally Sparkling

Dry White Sparkling Wine
99 Cases Produced
Grape: 100% Riesling
Alcohol: 11.6%
Total added sulfite: 50 ppm
Ingredients: Grapes, sugar, yeast, sulfite Crushed and destemmed
Stainless steel for 12 months
Unfined and Unfiltered
Farming: Conventional/sustainable
Vineyard: Lamb’s Quarters - Seneca Lake, west facing, gentle slope
Soil: Honeoye Silt Loam and Lansing Gravelly Loam over shale


NOTE: Aromas of peach and brioche, gently sparkling with lime zest on the finish.

ELEVAGE: Grapes were crushed and destemmed and pressed. Settled juice was moved to stainless steel where fermentation, including full malolactic, continued until July of 2021. In October of 2021 the wine was racked, sugar was added and it was bottled by hand without fining or filtration under crown cap. A second fermentation occurred in the bottle producing a nearly dry, sparkling wine. Bottles were not disgorged.

MISCELLANEOUS: Bottle fermentation for this wine took over three years to complete. And, to be honest, we suspect it is still continuing as of this writing. The fizz is light and felt mostly in the back of the mouth. A great wine for shellfish.
