2020 CABERNET FRANC ROSE

- Grape: 100% Cabernet Franc
- Alcohol: 11.6%
- Total added sulfite: 40 ppm
- Crushed and destemmed - 2 day maceration
- French oak barrels (10 year-old) for 12 months
- Unfined and Unfiltered
- Farming: Conventional/sustainable
- Vineyard: Keuka Lake, east facing, gentle slope
- Soil: Silt loam over shale

TASTING NOTE: Cherry pit, flint and raspberry aromas, ripe in the mouth, silky texture and gentle acid. Finishes dry and crisp with a kiss of raspberry.

ELEVAGE:Grapes were crushed and destemmed into bin to macerate for two days. Pressed juice was settled and browned for two days and then pumped to used French oak barrels to ferment. Fermentation, including full malolactic, finished in late September of 2021. In early November the wine was racked out of barrel and bottled by hand without fining or filtration.
