2020 CABERNET FRANC - Lamb's Quarters Vineyard

Grape: 100% cabernet franc
Alcohol: 11.6%
Total added sulfite: 30 ppm
- Whole cluster/foot crushed, 100% stem inclusion
- French oak barrels (4-10 years) for 11 months
- Unfined and Unfiltered
- Farming: Conventional/sustainable
- Vineyard: Seneca Lake, west facing, gentle slope
- Soil: Honeoye Silt Loam and Lansing Gravely Loam over shale


TASTING NOTE: Leafy raspberry, green pepper and tar in the nose. Medium body with a bright acid undercurrent, dense fruit and grainy stem tannin. Dry. Firm.With food.

ELEVAGE: Grapes were foot crushed and put whole cluster into one ton bins to ferment with once daily punchdowns. After fourteen days the grapes were pressed and settled juice was moved to used French oak barrels to complete fermentation. Fermentation, including full malolactic, finished in June of 2021. In September the wine was racked out of barrel into tank and bottled by hand without fining or filtration.
