2020 Cabernet Franc - Elizabeth's Vineyard

Grape: 100% Cabernet Franc
Alcohol: 11.9%
Total sulfite addition: 30 ppm
- Whole cluster/foot crushed, 100% stem inclusion
- American (14 year-old) and French (12 year-old) oak barrels for 11 months
- Unfined and unfiltered
- Farming: Conventional/sustainable
- Vineyard: Seneca Lake, west facing, steep slope
- Soil: Shallow silt loam over fractured shale
TASTING NOTE: Oak spice, black raspberry and graphite aromas. Structured wine with
big tannin and perfumed, vibrant raspberry fruit.
ELEVAGE: Grapes were foot crushed and put whole cluster into one ton bins to ferment
with once daily punchdowns. After thirteen days the grapes were pressed and settled
juice was moved to used American and French oak barrels to complete fermentation. Fermentation,
including full malolactic, finished in July of 2021. In September the wine was racked
out of barrel into tank and bottled by hand without fining or filtration.
