ELEVAGE:Hand picked grapes were crushed, destemmed and put into a one ton bin to macerate for two days. Pressed, settled juice was moved to stainless steel where fermentation, including full malolactic, took place. In September of 2020, after 11 months on its lees, the wine was racked and bottled by hand without fining or filtration.

TASTING NOTE: Aromas of apricot, lime, rainwater and hay. In the mouth it is balanced and bright with good weight and flavors of shale and apricot. Very dry and lightly tannic finish.

LAMB'S QUARTERS VINEYARD: In and around Lodi, New York on the eastern shore of Seneca Lake, grower Mark Wagner maintains nearly seventy acres of vines contained in six separate plots with soils mostly composed of deeper loam over shale and limestone. Green mulching and cover crops are used to manage weeds and vines are meticulously cared for with an eye towards sustainability. These vineyards produce classic Finger Lakes wines with wonderful balance and clarity.
