2018 CHARDONNAY

Grape: 100% Chardonnay - 10% botrytis affected fruit
Alcohol: 11.6%
Total sulfite addition: 50 ppm (25 at crush, 15 at 12 months, 10 at bottling)
Crushed and destemmed
Ambient yeast
Stainless steel - 12 months, old French oak - 11 months
Unfined and unfiltered
TASTING NOTE: Yellow apple, hay, tar and yeast aromas. Dry with rich fruit, juicy acids and
a powdery finish. Though the wine is totally dry it picks up some weight from the botrytis
and pairs well with dishes that have a little heat. Serve cool but not cold, 60 F.
ELEVAGE: Grapes were crushed, destemmed and put into a one ton bin to macerate
overnight. Pressed, browned and settled juice was moved to stainless steel where
fermentation, including full malolactic, took place. In October of 2019, after 12 months
in tank, the wine was moved to 4th use French oak barrels. After eleven months in barrel
the wine was racked and bottled by hand without fining or filtration.
VINEYARD: Located in Hector, New York on the eastern shore of Seneca Lake, this west
facing vineyard is composed of shallow silt loam soil over shale on a slope leading to
some of the lake's deepest waters. Farmed by second generation grower John
Leidenfrost and his daughter, Elizabeth, the vineyard's privileged exposure and thin,
shale laden soil produce wines of great depth and backbone.
